
It has been a while since I did shout out on this concept. I did some research and found this website that I know I will find useful. I wanted to share it because others may find it useful as well. In terms of a sharing a recipe I would have to say the recipe that I am sharing today is a personal favourite of mine. It is a vegan one but all of my vegan recipes can be altered to add meat which is what I do with my husband. It just needs to be cooked in a separate pan. I just add it to his plate. With this recipe my husband loves chicken with a jerk spice. As well I am a big garlic and lemon fan but you can limit that to your preference.
CAULIFLOWER ROAST
3 large cloves of garlic finely chopped
1 tablespoon of grated ginger
1 head of cauliflower chopped
3 peppers For colour I use red, yellow and orange
1 small red onion
1 1/2 portabella mushrooms
1 cup of cut baby carrots
Dressing:
Juice of 1 lemon
1/4 of olive oil
To desire fresh rosemary, oregano and thyme. You can also use dried herbs.
INSTRUCTIONS
- Preheat oven to 400 f
- Place parchment on a large cookie sheet
- Place all ingredients in a large bowl. No Dressing
- Add dressing to the bowl and stir
- Arrange on cookie sheet
- Cook for 20 minutes. Stir at the ten minute mark.
- If needed add meat to that dish
