HEALTHY RECIPE

Over the past couple of weeks I have had to re look at my diet. I need to find a way to make sure I am getting enough protein. I have now combined the Mediterranean diet with vegan. That way I have more options.

For dinner this week I needed something not that heavy and here is what I came up with.

LISA’S HOMEMADE SOUP RECIPE

2 cups low sodium chicken stock

1/2 cup of green beans or any other veggie

1/2 cup of mushrooms

1/2 cup of mixed peppers

1/4 cup of diced onion

2 cloves of minced garlic

1-2 cups of cooked chicken

Add herbs tarragon, basil and thyme to your own liking

Cook on the stove until well heated and veggies reach desired crunch.

Inventing dishes is something I love to do. Part of my relaxation at the end of the day is cooking. Any recipe of food ideas please send them to me.
