WHAT’S COOKING

Cooking for me has been a love of mine for a little while but I am refining the Mediterranean diet to suit my lifestyle. Wanted to share with you guys my tips. As most of you all know my husband still likes the red meat and other meats so we cook his protein on those day separately. For me I needed to be able to do the prep work in advance for the most part so that I just prepare a salad or his meat on that day.
Tips and Tricks that work for me:
- I made soup in bulk and froze it.
- Chilli I made ahead
- Pasta dishes I made ahead
- I always have cut peppers and cucumber in the fridge
- I have started to use ground chicken or turkey from time to time
Changing my diet is something that I have adapted. Due to Kidney disease I have had to limit a lot of different things but I still am able to enjoy my food and snacks. Also my husband doesn’t feel like he is missing out.
